- 1 Tbsp. I Can't Believe It's Not Butter!® Spread - 2 Tbsp. chopped shallots or onion - 5 ounces frozen whole baby carrots, partially thawed - 4 ounces snow peas (about 1 cup) - 2 tsp. chopped fresh parsley (optional)

Instructions
Melt I Can't Believe It's Not Butter!® Spread in 12-inch nonstick skillet over medium heat and cook shallots, stirring occasionally, 1 minute or until almost tender. Add carrots and snow peas and cook, stirring occasionally, 4 minutes or until crisp-tender. Stir in parsley and heat through.
NOTE: Recipe can be doubled.
