- 2 Tbsp. I Can't Believe It's Not Butter!® made with Olive Oil Spread - 1 cup regular or converted rice - 1 small onion, chopped - 1/4 tsp. salt - 1/8 tsp. ground black pepper - 1/8 tsp. dried thyme leaves, crushed (optional) - 1-3/4 cups chicken broth - 1/4 cup toasted slivered almonds - 1 tsp. chopped fresh parsley (optional)

Instructions
Melt I Can't Believe It's Not Butter!® made with Olive Oil Spread in 2-quart saucepan over medium-high heat and cook rice, onion, salt, pepper and thyme, stirring occasionally, 4 minutes or until rice is golden. Add broth and bring to a boil over high heat. Reduce heat to low and simmer covered 20 minutes. Let stand 5 minutes. Stir in almonds and parsley.
NOTE: Recipe can be halved.
